Mini Lemon Meringue & Coconut Pies (2 bites)

Ingredients
Cooking Spray1/2 cup salted butter, softened3 oz. neufchatel cheese, softened1 cup whole wheat flour1/2 cup Lemon Pie Filling (approx 182 calories)3 egg whites, room temp1/4 tsp cream of tartarpinch of kosher salt3/4 cup sugar1/4 cup sweetened Coconut Flakes
Directions
1.Preheat oven to 325 degrees.
2. Beat butter & cream cheese in bowl till thoroughly combined. Stir in flour.
3.Spray each 1 3/4" muffin cups with cooking spray. Press a rounded teaspoon of pastry evenly into the bottom & up the sides of each of the muffing cups. Bake for 8-10 minutes until edges are golden. Remove cups for oven; cool for 30 minutes in muffin tin.
4.Using a mixer, beat egg whites, in a a clean dry bowl, about 30 seconds. Add cream oftartar & salt & beat on high, gradually adding sugar 1 tbsp at a time until glossy & stiff, 3-4 minutes.
5. Leaving cups in tin, fill each cup with 1 tsp lemon pie filling & top with 1 tbsp. meringue. Broil on low until golden (30secs-1 min), being careful not to burn.
6. Remove from Broiler, let rest 10 minutes in tin, then gently loosen sides & transfer to a serving plate.
