Saute Spinach, Mushrooms and Bell Pepper

1 tablespoon of unsalted butter2 cloves of garlic, minced1 cup of sliced white mushrooms1 teaspoon fresh ground black pepperpinch of nutmeg1 large yellow bell pepper, medium dice1 - 10 ounce package of baby spinach, washed
1. In a large nonstick pan, heat the butter on medium high until it foams. Add the garlic and cook for 30 seconds.
2. Add the mushrooms and coat with the butter and garlic. Add the pepper and nutmeg and cook the mushrooms until they have released most of their moisture, about 4 minutes.
3. Add the peppers and cook until tender about 3 minutes.
4. Add the spinach and cook until wilted, about 5-6 minutes. Serve hot.
