Sesame Soba Noodles

Ingredients
1/2 pound soba noodles, cooked, drained and rinsed in cold water2 cloves garlic1/2 T canola oil1 cup sliced mixed veggies (I like red bell peppers, carrots, broccoli, asparagus)2 scallions, sliced thinly1 cup cucumber (seedless if you can find it), peeled and sliced thinly into half moons.Sauce ingredients:4 T smooth peanut butter2 T soy sauce1 T grated ginger1/2 T honey1 T sesame oilchili sauce (to taste)
Directions
Boil soba according to package directions, drain and rinse in cold water. Reserve some of the cooking water. (1/4 cup or so)

Combine sauce ingredients. Use some of the cooking water to thin out to a smooth, spreadable sauce.

Pour sauce over the drained noodles and toss with the cucumber and scallions.

Heat canola oil in a non-stick pan over medium heat. Add the chopped garlic and saute until fragrant, about 30 seconds. Add the veggies and saute until crisp/tender. (add a little water and cover to speed things along)

Add the contents of the skillet to the noodle mixture and serve.
