Green Chile Cheesecakes

Ingredients
Neufchatel Cheese, 24 oz (or cream cheese)Egg, fresh, 2 large Cornstarch, 3 TblspSalt, 1 tsp Pepper, black, .1/2 tspGreen Chili Peppers, 2 cans, dicedSour Cream, 1/2 cupTortilla Chips, 1 cup, crushedButter, salted, 4 tbsp, meltedEgg white, fresh, 1 largeCream Cheese, 1/2 for garnishFresh Chives, 4 tbsp chopped for garnish
Directions
Combine crushed chips, butter and egg white, press into individual cups (for bite sized appetizers), or the bottom of a springform pan for full sized (for full size/meal serving). Bake at 350 about 3-4 minutes for bite sized, 6-8 for full, to set and crisp.

Beat the filling ingredients all together in a mixing bowl. For bite size, use a small muffin scoop to fill the cup/crusts. For full size, pour all of the filling into the pan/crust.
Bake - about 15 minutes for bite sized, about 45 min - an hour for full sized, either should be set and golden brown on top.


Serving Size: 8 servings for meal; cut in half for appetizers
