Good For You Greek Salad

Ingredients
1 large tomato, cut into chunks1/2 cucumber, thick slices, quartered1/2 cup red pepper, roughly chopped1/2 small red onion, chopped1 tbsp extra virgin olive oil1/2 tsp fresh lemon juice1/2 tsp red wine vinegar1/2 tsp dried oregano1/4 cup low fat ricotta cheese2 Kalamata olives, pitted & sliced
Directions
In small bowl, mix extra virgin olive oil, lemon juice, red wine vinegar & oregano. Set aside. I large bowl, mix tomato chunks, cucumber, red pepper, onion. Add olive oil mixture & mix well. Add riccota cheese & sliced olives & toss gently.
