Low Calorie Chicken Soup

2 boneless skinless chicken breasts32 oz chicken broth (reduced sodium if desired)2 large carrots, peeled and chopped1 med white onion, diced1 cup frozen peas1-1/2 cups frozen chopped broccoli1/4 tsp garlic powder1/2 tsp black pepper1 tsp Adobo2 tbs dried parsley flakes1/2 tsp Creole seasoning (optional)
Pour chicken broth into a 3-qt pot, add whole chicken breasts, carrots, onion, broccoli, peas, and seasoning. Bring to a boil for 25 minutes.
Remove chicken breasts, cool until able to handle, and chop into small pieces (meat should cut and shred easily), place chopped chicken back into pot and add noodles. Continue to boil for 5 minutes, then reduce heat to medium-low for remaining time, or until noodles are tender.
Serving Size: makes approximately 6, 1.5-cup servings
