Sausage Cauliflower Scramble

*Aidells Chicken & Apple Sausage- 1 link, 2 servingEgg, fresh, 8 largeCauliflower, raw, .5 head, large (6-7" dia.)Butter, salted, 1 tbspMilk, nonfat, 1/2 cup
* Chop 1/2 head of large cauliflower & cover with water. Microwave for 8-10 mins.
* Chop 2 links of lowfat turkey or chicken sausage. Add 1 Tbsp. of butter to pan & place sausage in pan on medium heat.
* Drain cauliflower & add in pan w/sausage. Cook until sausage is done & cauliflower is tender to your liking. Meanwhile, scramble eggs w/the milk.
* Place eggs in pan w/cauliflower & sausage & scramble until done. Sprinkle w/salt & pepper.
Serving Size: makes approx. 8 servings
