Spinach and Pepper Stuffed Chicken

2 chicken breasts1c chopped fresh (or frozen) spinach3 slices of reduced fat Provolone cheese, chopped1/2c chopped roasted red peppers1/4c shredded Parm cheesePam Cooking SpraySalt/Pepper/Garlic Powder to taste
Chop spinach, Provolone cheese, and roasted peppers. Mix together and set aside.
Rinse chicken breasts and dry. Cut slit in largest part of breast, be careful not to cut through.
Stuff opening with Spinach/Pepper mix.
Season outside with salt/pepper/garlic.
Bake on 375 for approx 30 min (more or less depending on oven) until juices run clear. During last 5-10 minutes of cooking time, sprinkle Parmesan cheese on top of chicken.
Serving Size: Makes 4 servings (half a breast)
