1 cup pumpkin1 cup unsweetened vanilla almond milk2 tbsp flax seed mixed with 6 tbsp water2 scoops sun warrior vanilla rice protein1 1/2 cups rolled oats1/4 cup peanut flour1/4 cup whole wheat pastry flour2 tbsp stevia powder1 tsp almond extract1 1/2 tsp baking powder1/2 tsp baking soda2 tsp cinnamon1/2 tsp nutmeg1/4 tsp allspice1/4 tsp cloves
Begin with a large bowl and mix together pumpkin, milk, almond extract and "plumped" flaxseed. Add the dry ingredients--protein powder, oats, the 2 flours, baking powder/soda, stevia, and spices. Put into nonstick-sprayed muffin tin (or with muffin liners) for 20-25 minutes in a 350F oven.
