Quick 'n Easy Chicken and Vegetables

1 - lg boneless, skinless chicken breast, cubed1/2 10 oz pkg - frozen vegetables (broccoli, yellow squash, green beans, red pepper - or whatever you have on hand)2 tbs - olive oilSeason to taste:Italian Seasoning blendGarlic SaltGarlic PepperSeasoning SaltDried chopped onion
Heat skillet on medium heat
Add olive oil
Cut chicken into 1 inch cubes
Place chicken in heated skillet
Season to taste
Cover and let cook until meat is white, stirring occasionally, approximately 10 - 13 minutes.
Once chicken is cooked through, add frozen veggies, stirring to coat with seasoning and juices from chicken.
Cover and let cook another 7 - 10 minutes until veggies are heated through, but still firm
Serving Size: Makes 3 - 1 cup servings
