Southwest Slow Cooker Turkey

Ingredients
2 cans diced tomatoes (14.5 oz each) You can use low or no sodium tomatoes.1 Cup chopped onion1/2 Cup chopped green bell pepper2 cloves minced garlic (to equal 2 tblsp)1 Tblsp cilantro1 Tblsp dried oregano leaves1 tsp cumin1/2 tsp ground sea salt1/4 tsp ground black pepper1/4 tsp crushed red pepper flakes16 oz leftover turkey (I freeze mine in 16 oz packages)0.5 Cup shredded Mexican blend cheese - divided1/2 Cup reduced fat sour cream - divided
Directions
Combine all ingredients, except turkey, in slow cooker. Place the frozen turkey on top, cover and cook for 4 hours on low.

If using fresh turkey breast then cook 8 hours on low and break up/shred the turkey before serving.

Serve in bowls and top with shredded cheese and low fat sour cream.

Can also serve with Tortilla chips - don't forget to add the nutritional info if you do!
