Ingredients
10 boneless skinless chicken thighs (about 2.5 lbs)Onions, raw, 2 cup, choppedGreen Olives Stuffed with Garlic, 2 cups (about 20 large olives)1 lemon, sliced thinCider Vinegar, 1 tbspChicken Broth Low Sodium/Low Fat, 1 cupHerbs de Provence, 2 tspSalt, .5 tspPepper, black, .125 tsp
Directions
Chop onions and lay in bottom of crock pot. Arrange chicken on top. Cover each thigh with lemon slices. Add all seasonings, olives, vinegar and pour chicken broth over. Set crock pot on low for 5-6 hours.
