Cilantro Lime Cucumber Salad

Ingredients
1 large cucumber diced (I use the seedless variety)1 cup grape tomatoes (approx 12 to 14)1/2 onion sliced (I prefer red onions, they look nicer)1 cup mini portabella mushrooms diced (large pieces)2 ounces light cheddar cheese - dicedDressing1 tbsp extra virgin olive oil2 tbsp lime juice1 tbsp cilantro1 tbsp water1 clove of garlic minced
Directions
Chop and serve - it's that easy. I dress the salad, and then let it sit in the fridge for about an hour before eating. It seems to enhance the flavours!!
