Best Mock Mashed potatoes

Ingredients
1 Large head of Cauliflower1 Tbsp light cream cheese1/4 cup grated Parmesan Cheese1/2 tsp minced garlic1/2 tsp salt5 or so dashes of pepperChives for garnish
Directions
1. Wash and cut cauliflower into small pieces. Boil in a pot of water until soft.
2. Drain and dry using paper towels. Place in food processor or blender.
3.Puree all ingredients except pepper and chives. Pour into serving bowl, sprinkle with pepper and chives. Enjoy!
