Colorful No-Mayo Coleslaw

Ingredients
3 cups grated carrots (appox 4 large carrots)1 cup grated fresh beets (approx 1 large beet)3 cups grated green cabbage (about 1/3rd head)1/2 cup chopped fresh parsleyMarinade: 1/2 cup olive oil1/2 cup lemon juice (Santa Cruz organic is good)1 tbsp Blue Agave nectar1 clove fresh garlic, finely chopped
Directions
Grate carrots, beets, and cabbage. Add chopped parsley and toss in large bowl.

Combine marinade ingredients using a whisk. Add to vegetables and toss very well. Chill for at least 30 mins.

The bursting flavors from this dish will surprise you, and the low glycemic agave nectar as the sweetener is great for diabetics.

    This came out wonderful, atractive to look at, tasty and nutrucious to eat. I added a bit of finely grated ginger and substituted Organic Raw Unfiltered Apple Cider Vinegar for the lemon. Never would have thought to used beets raw in this manner. Thanks - 5/31/10
