Ingredients
1 eggplant1 Lg sweet pepper (any color)2 small Zucchini1 onion3 garlic cloves1 tsp basil1 Tb parsley1 Quart canned tomatoes
Directions
Peel and cube eggplant. Sprinkle with salt, place in a colander with a small plate on top. Place a can of food on top the plate and drain 15-30 minutes. Slice other vegetables. Saute all the vegetables in olive oil. Add herbs and tomatoes. Simmer about 20 minutes until tender.
