Crock Pot BBQ Beef

Ingredients
1 t. olive oil1 med. onion2 cloves garlic, minced2 T. white vinegar1 cup black coffee1 t. Dutch cocoa1/2 cup beer1 cup chili sauce1/4 cup lite soy saucejuice and grated peel of 1/2 lemon2 T. Worcestershire sauce2 T. steak saucefew drops hot pepper sauce1 T. dry mustard1/4 t. of any or all of the following: celery seed, thyme, tumeric, marjoram, paprika, red pepper, ginger2 bay leaves2 T Molasses2 t. cornstarch 5lb chuck roast
Directions
In a medium-sized, non-stick saucepan, heat oil. Saute onion and garlic for 2 min. Reduce heat and blend in remaining ingredients, whisking in the cornstarch last. Place roast in crock pot, pouring sauce over top. Cook on low 8-10 hours. Shred with fork and serve with onions on whole wheat buns.
