Red Velvet Cake with Cream Cheese Icing

1 1/2 cup sugar1/2 cup butter1 tsp vanilla2 eggs2 ounces red food coloring2 Tbsp cocoa2 1/2 cup flour1 tsp salt1 cup buttermilk1 tsp soda1 Tbsp vinegarIcing1 stick butter1 8 ounce cream cheese, 1/3 less fat2 tsp vanilla1 pound confectioners sugar
Cream sugar, butter and vanilla. Add eggs, one at a time. Make a paste of the red food coloring and the cocoa. Add sugar mixture and blend. Sift flour and salt. Add flour and buttermilk alternately. Beat well. Combine vinegar and soda, add to batter. Bake in 8 inch layer pans (2) at 350 degrees for 30 minutes.
