Lemon Greek Chicken

Ingredients
6 chicken breasts (appr. 5 oz each)4 Red Potatoes1 large Red Bell Pepper1 Large Red Onion1/4 cup lemon juice2 TBS Lemon Zest1 tsp Salt1 tsp Black Pepper2 tsp Oregano10 cloves Garlic
Directions
1.)Spray large baker with cooking spray.
2.)slice potatoes (I like them sliced in the shape of potato chips) and layer in bottom of baker
3.)Slice chicken breasts in half (making 12 strips total) place on top of potatoes.
4.)Slice Red Pepper and discard seeds, place over chicken and potatoes
5.)Cut Red Onion into chuncks, place over previous ingredients.
6.)mix lemon juice, zest, garlic (minced), salt, pepper and oregano, pour over ingredients in the baker.
7.)Cover with foil and bake 1 hour in a preheated 400 degree oven. Uncover and bake an additional 20 minutes, or until potatoes are done and chicken is no longer pink.
