Chunky Chicken Chili with rice

Ingredients
Pack of boneless chicken thighs1/8 of a cup of shredded cheddar1.5 cups of ricecan of yellow corn (drained)can of black beans (drained)i Can't Believe Its Not Butter SprayPam Canola Cooking SprayChili Powder
Directions
Stove should be on medium/high
Spray your skillet with the Pam spray and Butter Spray (Only spray butter twice)
Pour Chili powder onto skillet
Cut chicken into medium sized chunks and cook in skillet. Add more chili powder.
Once chicken is cooked add beans and corn.
Mix all together and cook on low for 10 minutes. Add cheese and cooked rice and mix all together.
Makes 8 1 cup servings.

Add Rotel Tomatoes with Chilis for an added kick.

    I thought it was great, my family liked it and we will make it again. I used chicken breasts instead of thighs and did use the tomatoes with chili, it was pretty spicy but we liked it a lot. - 1/25/08
