French Lentil Taco Filling

1/2 c. dry french lentils1 c. and 1/2 c. water or broth(recipe calculated with water)1 medium carrot, chopped1/2 bell pepper, diced3 cloves garlic, grated3 slices red onion, diced2 tsp. sazon1 tsp. chili powder1/2 tsp. cuminhot saucesaltpepper
Rinse lentils under cold water. Bring water and lentils to a boil, reduce heat and simmer for 30 min, covered. In the meantime after about 20 min, saute the vegetables and spices (to taste) in a pan with nonstick spray until softened.
Add the mostly cooked lentils and 1/2 cup of additional water to the sauteed vegetables. Simmer for an additional 5-10 minutes, adding up to an additional 1/2 c. of water as needed, until the lentils are just past al dente.
Serve into taco shells of your choice, or put on top of salad for taco salad.
Serving Size: Makes enough filling for 6 tacos
