Apple Banana Muffins

Ingredients
2 cups flour1 tsp salt1/2 tsp cinnamon1 1/4 cup sugar1 tsp vanilla1 tsp baking soda1/4 tsp nutmeg2/3 cup shortening2 eggs1/4 cup lowfat buttermilk1 cup ripe, mashed bananas2 apples - peeled, cored and shredded
Directions
Preheat oven @ 375 degrees.

Sift flour, baking soda, salt, cinnamon and nutmeg. Set aside.

Cream shortening & sugar. Beat in eggs, one at a time, then stir in vanilla and buttermilk. Beat in flour mixture a little at a time and mix just until incorporated. Fold in bananas and apples. Fill muffin cups about half full.

Bake 20 - 25 minutes.
