Old-Fashioned Corn Pone

1/4 cup whole wheat flour1 cup white corn meal (bolted or stone ground is best)1/2 tsp baking powder1/2 tsp baking soda1/2 tsp salt (optional)1 cup lowfat buttermilk
Preheat oven to 450 degree F.
Sift flour, corn meal, baking powder, baking soda, and salt together.
Meanwhile, heat a heavy 8 inch oven proof skillet. over medium heat. When pan is hot, spray with non-stick cooking spray.
Mix the buttermilk into the dry ingredients, moistening all but not over-beating.
Turn batter into the prepared pan.
Bake for 15 minutes, broil the top for a nice crust.
