16-Bean and Ham Soup (homemade)

Ingredients
16 Bean Soup Mix2 cups cured ham, diced1 can tomatoes, drained1 large onion, diced2 cups carrots, diced1 tablespoon lemon juice8 cups water
Directions
Let beans soak overnight, then drain water.
add ham, carrots, onions, and fresh water, bring to a boil then simmer for 2 - 3 hours.
add rest of ingredients and cook until beans are soft, 1 1/2 - 3 hours.
add ham flavor packet 30 minutes before soup is done, and lemon juice just before serving.

    This is how I make it too, but I add peppers, celery and garlic along with the onion and carrots. LOTS of pepper and a Tablespoon "Better Than Bouillon." And I skip the flavor packet. - 5/4/20
