Potato Salad (Low Fat)

24 oz Potatoes1/2 cup Chopped Onion6 TBSP Sweet Pickle Relish4 Boiled Eggs1/2 cup Fat Free Miracle Whip1 TBSP MustardSalt and Pepper
1. Wash, Cube, and Boil Potatoes. (24 oz is about 4-5 medium sized potatoes)
2. Boil Eggs.
3. While Potatoes and Eggs are boiling, combine FF Miracle Whip, Chopped Onion, Relish, and Mustard. Add Salt and Pepper as desired.
4. Dice boiled eggs and add to the Dressing mixture.
5. Mix Potatoes and Dressing mixture.
6. Chill for about 30 minutes.
Makes about 8 1/2-cup servings.
