Better For You Beef Stroganoff

Ingredients
3 cups fresh mushrooms, sliced1/2 cup sweet onion, minced2 Tbsp butter1 lb Top Sirloin, sliced into very thin 2-inch slices1/4 cup flour, divided1 can beef consomme1/2 cup reduced fat sour cream8 oz No Yolk Broad Noodles, cooked & drained
Directions
Makes 6 servings

Melt butter in large skillet and add mushrooms. Cook until they release their liquid (about 5 mins), add onion. You may need to do this in two batches depending on the size of your skillet. While mushrooms are cooking slice steak into very thin 2 inch slices and put in large zipper bag. Add 2 Tbsp flour, salt & pepper to taste, shake to coat. When mushrooms are soft, remove from pan and set aside. Heat oil in same skillet. When hot add steak and cook quickly over med hi heat until just done. Add mushrooms & onions back in. Sprinkle remaining flour on top, stir well and cook over med heat for 3-4 mins. Add consomme, stir well and boil until liquid is reduced by almost half and is thick. Turn heat to low, stir in sour cream. Heat through. Serve over noodles.

    I followed the Spark Cookbook recipe, similar to this, My husband kept saying "It is Delicious"....for me the receipe called for 1 tsp of thyme, which over powered the recipe, so I would follow your recipe the next time I make it. - 3/13/12
