Garlic Lover's Penne & Vine-Ripened Tomatoes

Ingredients
3 C whole wheat penne, dry1(10 oz) pkg frozen broccoli2 med size vine-ripened tomatoes, chopped2 tbsp extra light olive oil1 tsp garlic powder1/4 tsp black pepper1/2 tsp salt3 cloves garlic, mincedfeta cheese or parmesan(optional)grilled chicken breast(optional)Note: Optional items have not been calculated into the nutritional value chart.
Directions
Makes about 6 servings

Prepare penne according to box directions, drain and rinse. Set aside.

While penne is cooking, prepare broccoli according to package directions (steaming is nice so you can lock in the flavor). Chop tomatoes and mince garlic.

In a medium bowl combine all ingredients, adding olive oil before spices and minced garlic.

Toss gently and enjoy warm or refrigerate for 1-2 hours for a cold salad.

(Optional) Add feta or a little parmesan for taste. This also can be used as a main dish by adding grilled chicken to it!
