SUPER MOIST CORNBREAD MUFFINS

Ingredients
1 Corn Muffin box mix (I used Clear Value this time Jiffy is fine too)1/4 cup Kraft 2% four cheese Mexican cheese blend 1/2 can of sweet canned corn1/3 cup/5.5 oz soy milk1 egg1 TBSP scallions
Directions
Pre-heat oven to 400 degrees. Mix all ingredients together in bowl. Spray non-stick pan with non-stick spray. Spoon a heaping TBSP into each hole in muffin tin. Cook for 15 min's.
