Ingredients
4 Mission, Low Carb soft Taco Size Tortilla3/4 C Shredded Pepperjack Cheese4 Thin Roma Tomato Slices4 Slices LightLife Smart Deli Roast Turkey Style8 tsp. Alfalfa Sprouts8 Thin Avocado Slices4 Wooden Sandwich Picks or Toothpicks (optional)
Directions
1. Place 1 tortilla in a small non-stick saute pan over medium heat, sprinkle 3 Tbsp. (or 1/2 oz.) cheese over 1/2 of tortilla. Once tortilla is warmed through fold tortilla over cheese to form a 1/2 circle quesadilla, only toasting on one side. Remove from saute pan, toasted side down, & layer bottom half of quesadilla with 1 tomato slice, one folded turkey slice, 2 tsp. of alfalfa sprouts, & 2 avocado slices, fold quesadilla over to enclose fillings, using a sandwich pick to hold closed if needed.
2. Repeat with remaining tortillas & fillings.
