Spinach-Veggie Frittata

Ingredients
1/2 cup chopped onion1 tbsp Earth Balance margarine10 oz. frozen spinach, thawed and drained1 clove garlic2 cups cauliflower1/4 cup broccoli1/2 cup diced tomatoes, drained1/2 cup parmesan cheese4 eggs, beaten1/2 cup milk1/2 cup shredded cheddar1/2 cup shredded mozzarellaSalt and pepper
Directions
Cook onion in margarine until translucent. Add garlic, cook for 30 seconds, and then add spinach. Mix and cook 4-5 minutes.

Add vegetables and parmesan; mix well.

Combine eggs and milk, along with some salt and pepper. Stir into the vegetable mixture.

Place mixture in a 2 qt. baking dish, and top with cheddar and mozzarella. Bake at 350 for 30-40 minutes.

Serving Size: Makes four servings.
