1 Avocado4 tbsp of Cilantro8 Cherry Tomatoes1/8 of a cup of Scallions0.5 cup of Yellow/Orange/Red Bell Pepper0.5 cup of Trader Joes Organic QuinoaJuice from 1 lime
1. Chopped tomatoes, scallions, bell pepper
2. Mix vegetables above with quinoa and cilantro in a bowl with the lime juice
3. Cut avocado in half. Remove pit. Save the skins. Chop fruit into little squares
4. Add avocado into mixture and fold together
5. Stuff avocado shells with mixture
