Brandi's Crock Pot Roast

2.5 lbs. Beef Roast6-8 sm. Russet Potatoes (w/ skin), cut in quarters1 - 16 oz. bag of Green Giant Baby Cut Carrots1-2 med. Onions, chopped6 Cloves of Garlic, smashed1 - 32 oz. can of Swanson's Beef Broth2 c. Water2 Boullion Cubes1/4 c. Cornstarch for thickening1/2 c. Water
Add all ingredients (except cornstarch) to crock pot and cook on low for at least 8 hours or on high for 5-6 hours. Mix cornstarch with water, add to crockpot in the last 20 minutes of cooking to thicken the gravy.
Yeilds 6 servings. Freezes well.
