Sear short ribs in olive oil in the stove until browned on all sides over high heat. Place in crock pot as browning in batches. Sautee sliced veggies in the juices of the meat (same pan). ONce coated and fragrant, add beef broth and wine to pan, then bring to a boil. Once reduced, pour mixture over ribs in the crockpot and cook on low ALL DAY LONG. I usually put them on bewteen 8-10am hoping they'll have at least 10 hours to become so tender they fall off the bone.
