Slow Cooker Chicken and Sweet Potato Stew

Ingredients
4 boneless, skinless chicken breasts, cut into bite-size pieces.2 medium sweet potatoes, peeled and cubedw medium carrots, peeled and cut into 1/2 inch slices.1 Can (28 ounces) of whole stewed tomatoes1 teaspoon salt1 teaspoon paprika1 teaspoon of celery seed1/2 teaspoon of black pepper1/8 teaspoon of ground nutmeg1/8 teaspoon of cinnamon1 cup nonfat, low-sodium chicken broth1/4 cup of fresh basil leaves, chopped
Directions
1. Combine chicken, potatoes, carrots, tomatoes, salt, paprika, celery seed, pepper, cinnamon, nutmeg and broth in the slow cooker.

2. Cover, cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

3. Sprinkle with basil just before serving.

    The exotic spices lend themselves to something more exotic than chicken, in my opinion. I'm going to try lamb next time, but it's good with chicken, too. - 12/16/10

    I had to modify this recipe a bit because I didn't have all the ingredients. I made the following substitutions:
    carrots = canned corn
    stewed tomatoes = tomato sauce
    nutmeg = garam masala (gave it a more indian flavor)
    celery seed = garlic, chopped
    Basil omitted.
