Low Fat Italian Wedding Soup

Ingredients
Lean Turkey Sausage (spicy Italian if you can find it), 16 oz Low Sodium Chicken Broth, 4 cupsCanned Tomatoes 1 - 12 oz CanSpinach, fresh, 3 cups chopped Water 12 ozJasmine or scented rice, 1 cup uncookedFresh lemon juice, 1/2 of a lemon squeezed or to tasteFresh chopped basil, 1 Tbsp or to taste
Directions
Cut the casing away from the sausage, break it into little bite-sized balls and fry it in a large soup pot. When it;s cooked through, add 3 cups of finely chopped spinach and fry for another minute or so. Puree the tomotoes then add them along with the chicken broth, water, and rice. You can add a little fresh lemon juice and some fresh chopped basil to taste. Simmer just until the rice is done - take care to not overcook as this will make the rice mushy. To increase the fibre content, you can use brown rice instead of the Jasmine. Makes 10 - 1 cup servings
