Cranberry Corn Muffins

Ingredients
1 cup whole wheat flour3/4 cup cornmeal6 tsp Splenda2 tsp baking powder1/4 tsp salt1 egg, large3/4 cup buttermilk1/2 cup unsweetened applesauce1/2 tsp lemon zest2 cups cranberries, chopped coarsely1 cup chopped walnuts6 tsp granulated sugar
Directions
Grease 12 cup muffin tin.
Preheat oven to 400*F.
Mix all dry ingredients (except sugar and walnuts) in a medium bowl.
In another bowl, mix all wet ingredients.
Combine wet ingredients with dry ingredients just until wet. Add cranberries and walnuts.
Divide into muffin tin and sprinkle with sugar.
Bake for 20 minutes or until golden. Cool.
I wrap individually and freeze them for later.
