Bulgur Rice - Turkish Style

Ingredients
1 large onion2 medium tomatos1 cubanelle (or green) pepper5 tbsp butter2.5 cups of bulgur2.5 cups of watersalt, pepper, red pepper flakes, to taste
Directions
chop the onion and saute it with the butter for 10-15 minutes
chop tomatos and pepper, then add them to onion and cook for 10 more minutes until tomato is soft
add the water, and seasonings, to taste
add the bulgur and stir well into the vegetable mixture
cook covered on med-high for 5 minutes, until water is absorbed (shake pan every couple minutes to prevent bulgur from sticking to the bottom)
after water is absorbed, turn off heat
fold clean towel and place it over pan, and put the lid on top, let pan sit for approx 20 minutes then stir and serve

makes 6-8 1 cup servings
