2 lb. Baby Red Potatoes2 Tbsp. Smart Balance Light Buttery Spread1 Tbsp Chopped Parsley
Scrub potatoes and peel a ring around each one. Put into a pan of water and bring to a boil over medium high heat. Boil for 10 - 15 minutes until a knife pierces the potato easily. Drain and return to pot. toss with butter and parsley until coated evenly. Serve immediately.
