3 cups of frozen hash browns thawed3 tbl melted butter12 breakfast sausage links chopped6 eggs2 cups shredded Mexican cheese blend1 1/2 cups chopped mushrooms1/4 cups chopped green pepper1/4 cups chopped onion
Melt the butter in the bottom of a glass baking dish. Press the hashbrowns into the bottom of the dish. Bake at 400 for about 10 minutes until they start to brown. While they are baking cook the sausage until almost done. Add the vegetables and cook for another 2 minutes or so. Spread the sausage and vegetables over the hash browns. Beat the eggs, add 2 tsps of water and beat til frothy. Mix in the cheese and pour over the pan. Bake 13-15 minutes until set.
