Carrot Cake and Cream Cheese Baked Oatmeal (vegan option)

Ingredients
1/4 cup rolled oats2 tbsp fiber one cereal, slightly crushed1/4 cup water (could use almond milk, 9 extra calories)1/2 a 4-oz jar carrot baby food1 grated carrot stick (or 2 baby carrots)1/4 tsp vanilladash each cinnamon, nutmeg, cloves, and ginger2 tbsp fat-free cream cheese, slightly melted**optional add-ins/toppings: raisins, pecans, walnuts, white chocolate chips**VEGAN OPTION: if you replace the cream cheese with Tofutti cream cheese, the recipe is instantly vegan! :)
Directions
Mix together dry ingredients, add in wet and stir to mix. Pour into sprayed baking dish and swirl in cheese. Bake at 375 for about 20 minutes, broiling another 3 if not crispy/crusty enough. Enjoy!
