Omi's German Potato Salad

15 medium potatoes - Yukon Gold (yellow)1 onion, minced1 tsp mustard1 tsp vegetable broth bouillonvinegar to tastewarm water to taste2 tsp saltoil to taste1 tomato2 tbsp parsley1 boiled egg
boil potatoes in the jackets in salt water until tender. Pour out water and put potatoes on the counter to cool. When cool, peel potatoes and use narrow grater, grating the potatoes into a large serving bowl. In a separate bowl mix together warm water, vinegar, onion, mustard, salt and bouillon cube. let sit until onion softens and bouillon has dissolved. mix everything together well and taste. 1/2 an hour before serving, warm up the dressing and pour over the potatoes. Mix well. right before serving pour 2 tbsp of oil over the salad and mix gently.
Slice hard boiled egg, and decorate the salad with the egg and parsley.
