1 Tbsp. olive oil4 c. thinly sliced potatoes1/2 tsp. salt2 oz. reduced fat shredded cheddar cheese2 tsp. reduced fat parmesan cheese1 slice light bread, crumbled
Preheat oven to 425 degrees Fahrenheit. Coat bottom an 8" by 8" baking pan with olive oil. Add potatoes and salt, arranging potatoes in an even layer in pan. Sprinkle cheese and bread crumbs on top. Cover with foil. Bake 20 minutes; uncover and baked 15 more minutes or until potatoes are tender.
