Oatmeal Apple Pancakes

Ingredients
1 1/2 Cups Old Fashioned Oats1/4 Cup flour2 tsp baking powder2 tsp sugar1 tsp cinnamon2 eggs1 1/2 Cups 1% milk2 Tbsp canola oil1 medium apple, grated
Directions
Pulse oats in food processor until flour-like. Combine dry ingredients in one bowl, wet in another. Mix wet into dry. Mix in grated apple. Let stand for 10 minutes. Heat skillet on medium low. Use 1/4 cup scoop per pancake. Spread out with back of spoon. When bubbles form, turn for @ a minute (they'll sort of puff a bit.)
