Lisa’s Quinoa and Chicken Salad

boneless, skinless chicken breasts cut into small strips1 onion3 clove garlic1 tbsp olive oilGreen, yellow and red peppers, chopped1/2 Red onion, chopped1 cup chopped scallions1 cucumber, peeled and diced3 to 4 stalks chopped celery1 jalapeño, seeded (or not, for more spice) and diced small3 cups fresh spinachjuice of 1 lemon1 tbsp olive oilfresh mint leavesfresh oreganopinch of sugarsalt and pepper to taste
Cook chicken with onions and garlic and olive oil. Cook quinoa according to package directions. Chop all vegetables - add all veggies, chicken, and Quinoa together in a bowl while quinoa is still hot. Toss with lemon juice mixed with a tbsp of olive oil and a pinch of sugar, salt, pepper, fresh mint leaves and fresh oregano. Serve immediately.
