Jay's Chicken Tacos

1 4-lb chicken1/2 head iceberg lettuce, shredded1 onion, chopped1-2 jalapeno peppers, seeded and diced3 avocados, flesh cut into cubesJuice of 2-3 limesCanola oilChili powderCuminCayenne pepper (optional)Garlic powderOnion powderSalt and pepper
Cook the chicken thoroughly, either by boiling or using a pressure cooker (10-15 minutes). Set aside and allow to cool. Meanwhile, combine vegetables and lime juice thoroughly and refrigerate for half an hour.
Discard chicken bones, skin, and visible fat. Shred meat with fingers to form thin fibers. Toss with seasoning to desired taste. Heat a thin film of canola oil in a large non-stick pan until very hot. Heat the chicken in the pan, stirring occasionally, until some fibers begin to crisp and brown. Serve, with lettuce mixture, in tortillas (not included in nutritional estimate). Makes filling for 10 chicken tacos.
