Mexican Breakfast Pizza (Adapted from Hungry Girl)

Ingredients
1 Medium Fresh Egg1 TBSP liquid Egg Whites1 TBSP Red Bell Pepper, diced1/2 TBSP diced red onion1 Cherry tomato, diced1 Slice Sargento Colby-Pepper Jack Cheese1 TBSP Pea Guacamole1TBSP Light Sour Cream
Directions
Heat a small skillet sprayed with non-stick spray over medium low. Mix egg and egg white together and put in heated skillet. Cover with lid and cook for 3 minutes.

Meanwhile in a small bowl microwave diced vegetables for 1 minute.

Carefully flip Egg "crust". Cover crust in pea guacamole, then put on diced veggies and cover with cheese. Cover skillet with lid and cook for another 1-2 minutes, or until cheese is melted.

Remove "pizza" and dallop with sour cream.

Enjoy!!
