Southwestern Soup

Ingredients
3/4 C. Onion1 breast of chicken2 t. Garlic, minced1 t. ground Cumin1/2 t. crushed Red Pepper1/2 t. Tabasco1 can Black Beans, drained and rinsed1 can corn, drained1 can Rotel, tomatoes with green chilies2 T. chopped Cilantro
Directions
Saute 3/4 cup onion in 1 T. olive oil. Add chicken and cook thoroughly, stirring occasionally. Add 2 t. minced garlic, 1 t. ground Cumin, 1/2 t. crushed red pepper, 1/2 t. Tabasco sauce and cook for approximately 5 minutes. Add drained and rinsed black beans, drained corn, and can of Rotel tomatoes. Heat thoroughly, approximately 10-15 minutes. Add cilantro and cook another 5 minutes. Serve hot! Makes 2 large or 3 smaller portions.
