Bayou Country Seafood Casserole

Ingredients
1 med. onion chopped1 med. bell pepper chopped1 celery rib chopped1 garlic clove minced6 tablespoons margarine1 can condensed cream of mushroom soup (98% fat free)1 lb. shrimp tails removed1-1/2 cups cooked rice2 cans crabmeat (6 oz each)4 slices day-old bread3/4 cup skim milksalt and pepper to taste*If you want you can add a cajun or Old Bay seasoning blend to give it more flavor
Directions
In a large skillet saute onion, peppers, celery, and garlic in margarine until tender. Add soup and shrimp. Cook and stir over medium heat until all ingredients are blended (if you used raw shrimp, cook until shrimp is no longer pink). Stir in rice, bread cubes, milk, and seasonings. Spoon into a greased 2 qt. baking dish. Baked uncovered or until heated through at 375. (25-30 minutes).
