French Onion Soup

8 cups onion Large Diced1 Teaspoon Salt3 Tablespoons unsalted butter6 cups beef broth2 cups chicken broth1 Tablespoon Balsamic Vinegar1 Tablespoon Worcestershire sauce4 Dashes of hot saucePepper to taste (20 grinds)
Chop onion, sautee in the butter and salt. Let it carmalize for an hour + add all the stock, worsh sauce and hot sauce. Add Parsley Thyme and 4 Bay leaves. Add the pepper, too. Let it simmer for at least 30 minutes. Towards the end, add 1 TBS of Balsamic Vinegar. (helps with the onions)
