Pepperoni pizza

1 pkg. yeast1 3/4 c. warm water (~105 degrees)1 t. sugar1 T Olive oil4 c. white flour.25 c semolina flour1 t. salt8 oz. part skim mozzarella (shredded)1/2 c. jarred pizza sauce about 6 servings turkey pepperoni (about 100 slices, 50 per pizza)
Dissolve yeast in warm water and sugar. Let rest until foamy (about 5 minutes). Mix flours and salt in mixer with bread hook attachment. When yeast is foamy, add olive oil and mix into flour. Knead with bread hook for about 5 minutes or until well combined. Place in greased bowl and let rise in warm place for about an hour or until double in size. Split dough into halves and roll or spread out on cookie sheets until you have a circle about 16-18 inches in diameter (we like a thinner crust). Cover each pizza shell with 1/4 cup pizza sauce, 4 oz shredded mozzarella and about 50 turkey pepperoni pieces each. Bake at 450 degrees for about 12-15 minutes or until crispy and cheese is melted.
